I do not have any issues with gluten as yet but I bought some organic spelt flour and I want a nice cookie recipe or some buns or something to make with it so I can have a good intro to this flour.. I will try VB spelt muffins later this week but I want another sweet or savory treat with spelt flour.

Just made the Banana Bread
Lovely and moist with the best texture ever.
I never tasted spelt anything so I thought it was one of those things with a taste but I am going to be converting all my baked Caribbean goods to spelt and see how that works.
I hope my husbands leaves some of the bread so I can take a pic. It is too warm to slice and shoot now.

Just a heads up, spelt has gluten. And many people who can't eat wheat can't eat spelt either.

True, but it does have less gluten than wheat if you're just reducing your gluten intake.

thx for the headsup I know now. I just want to decrease gluten intake and taste a new flour.

I personally looove pancakes with half-spelt, half-regular flour. Spelt is so light and nutty and awesome.

I am on that this weekend will add some hazelnut flour and do chocolate chip pancakes with it. I really love spelt now too...where was spelt all my life?:)
