Does anyone have a good reliable one? I saw these (non-vegan) at Whole Foods bakery and instantly thought I needed to make them. For those that don't know, they look like this:
Oh man, I used to work at the university commissary bakery before I was vegan and I loved the caramelitas. They were my favorite treat. I've wanted to veganize them for years.
The base and topping are basically an oatmeal cookie. Press half the batch into the bottom, sprinkle with chocolate chips and caramel sauce (the peanut butter caramel from VCon would be good), then drop pieces of the rest of the dough in top. I don't have a recipe for the bars, but elements of the bars already exist in vegan form.
My goal before Christmas is to veganize my families Carmelita recipe. Its really from a 70's magazine but we've been making them since the 70's and they are the best.
The recipe we use is a oats, melted butter, brown sugar and something else i'm forgetting bottom which is baked. Then we pour on chocolate chips and chopped walnuts and jarred caramel mixed with a few tablespoons of flour. All I really need to do is veganize the caramel which should be easy but I just don't have the time to do it right now.
