I bought one of these for the kid's birthday - http://www.wilton.com/store/site/produc ... 6F3A2ABB5E (the page isn't loading right now - it's just one of those giant cake size cupcake shape pans). I made a batch and a half of Kittee's strawberry kake - http://pakupaku.info/sweets/strawberrykake.shtml - and put it in there. Of course I forgot to take rising into account, so it's a bit too much.

But anyway, the pan came with a cake recipe that said too cook that cake at 325º for 60-70 minutes (Kittee's cake is 350º for 30-45 min) and that cake was in there for about an hour and a half. I'm totally freaked out that it's over done and it's going to be horrible! It's upside down and cooling on racks now - at least it came out of the pan okay, so I guess that's something.

SIGH.

Really hoping it comes out okay. The kid wanted a fancy cake and I don't have fancy cake skills, and there are no vegan friendly bakeries anywhere near here.

I'm sure it'll be awesome. I would be super impressed if someone made me a giant cupcake.

If you overfilled it and it rose, can't you just trim off the excess bits and try those for potential overdone-ness? It's getting covered with frosting anyway, you can totally pick at it.

My frosting is yummy, but I'm trying to use a pastry tube, and those things hate me too. SIGH.

I made one for my sister for her wedding (they had cupcakes instead of cake, but still wanted to be able to cut the cake together), and I was so anxious about it not working out! Especially since my first trial run was a failure. But the second time it worked great! (I don't actually know what I did differently.) And people really loved the look of the giant cupcake cake. You're a good mom for going through all this! Just hope she doesn't want one for her wedding.

If the pastry tube is stilla failure, you can just smooth a layer of frosting over the top half with a knife. The ridges hold it well, and I liked the look of the edges of the ridges showing--a built-in swirl! I liked it so much I did the same for the bottom half, so that it looked ribbed. I don't have any pictures at the moment, but I could post one later today if you're interested.
