What is the best way to keep kale chips crispy? I've looked all over different blogs and boards and usually see something to the effect of " Mine never stick around long enough to find out". The problem is I am making a huge amount (for about 300-400 people) and I need do make them several days ahead to ensure that I reach the quantity needed.

I tested it out this weekend but they seem to be a little less crisp already. They are in "tupperware", unrefrigerated. BTW, mine were massaged in a dressing before I baked them in the oven which I think might make it more difficult to keep them crisp.

How do I keep them crisp, people?

i have no idea, but it sounds like you have the right idea to try out some ideas first. try not massaging them first. i definitely wouldn't refrigerate them.

when they're fresh out of the oven, leave them in open air to fully cool, and then put them in tupperware.
i haven't done this myself, but it seems like the most logical solution.

I save the packages of desiccant that come with things like new shoes, some types of nori, etc such, and throw one of those into the air tight container with the kale chips.

I threw mine back in the oven for a few minutes and they crisped right back up!

Do you have a dehydrator? Those kind of kale chips will probably stay crispier than the oven baked kind., or at least I assume so, since the dehydrated ones sold off the shelf in stores.
