Hello PPK lovelies I was just given some beautiful oyster mushrooms but don't have a clue what to do with them. I think they're typically used in Asian-type dishes. Having not made the VWAV seitan-portobello stroganoff yet I thought perhaps I could put them in that along with the portobellos I've got hanging around... Any thoughts/suggestions?

Oh, my god. The restaurant where we ate last night does this amazing thing with oyster mushrooms. They coat them in cornmeal and fry them, and serve them alongside a horseradish/dill tartar sauce. Think fried clams, only a million times better! If I had oyster mushrooms, I would attempt to recreate them!

They're really good roasted, too. I roasted some once with sliced delicata squash, just tossed with a little olive oil, salt and fresh thyme.
Those fried ones sound to die for!

Please let us know the restaurant name if it's in Boston/New England OR, if you make it and it turns out--give the details! OM NOM! I love oyster mushrooms anyway. I just sautee them and eat them! Not very thrilling though...

There is a really good clam free chowder recipe on one of the vegweb threads. It takes a while to make but it is so worth it. I can never find fresh oyster mushrooms when I make it so I always have to use dried.

Yeah, Millennium's oyster mushroom calamari is amazing. However, I really love mushrooms, especially oysters and shiitakes, so I like them prepared very simply. Usually I do something like Isa does with Chanterelles here: http://www.theppk.com/2009/10/white-win ... nterelles/ I like using coconut oil and a high heat for oyster mushrooms. And lemon is essential!

i just like to take wild mushrooms like oysters, chantrelles, lion's mane and saute them with some earth balance or olive oil and eat them in a tortilla. super simple but out of this world delicious

Actually, I think he would probably like these enough to not care that they weren't 'real' oysters. ETA: I just looked at the menu for there, and I'm afraid I'm going to short out my husband's laptop from drooling all over the keyboard! HOW have I not been there yet?! I actually saw some oyster mushrooms at the HFS yesterday, and immediately bought them, so I could attempt to recreate them at home. (That's how good they are; I wanted them again within 48 hours!) I usually make a "clam" chowder with them. There's a good one in Vegan Planet, plus I've substituted them in place of shiitakes in Isa's Manhattan Glam Chowder in AFR, but I used 1/2 lb rather than 1/4 lb.

There's a recipe in Kind Diet for a risotto with oyster mushrooms and peas that is delish!
