I know! Reading that, I was like, this poor person has never had properly prepared winter squash. I could almost feel sorry for them, if they weren't extolling the wonders of rubbing pig fat all over innocent vegetables that have never done harm to anyone. On the bright side, this reminded that I haven't made stuffed squash yet this fall: tomorrow! Sans lard (artisanal or otherwise)!

Wow, it looks like I've been cooking squash wrong! I'm so glad that article showed me the light.

I was at a fancy restaurant recently where I couldn't eat their fries, because they were fried in goose fat. They were really proud of their fancy-ass, goose-fat fries, but I was disgusted.

But sausage fat in butternut squash, I mean, of course!

I feel bad for this person, not being able to enjoy vegetables in their true glory!

I think this person just doesn't know how to cook it right.
