So this is the first holiday ever not being hosted at my parent's house. My parents have both gone vegetarian since I went vegan and they were always veg friendly before that so eating was never an issue. My mom and I would usually come up with a badass menu to please everyone. This year it is at my uncles. I know he is serving a meatless lasagna but I obvs can't eat that since it will be loaded with cheese and my mom isn't too interested in eating it either. Since I will only be there for a little while and am eating a real dinner later I don't want him to feel like he needs to accomodate us but I don't want to sit at the table with no food. I'm not sure he would know what to do about vegans anyways!

We don't need a recipe to feed a lot since we will probably be the only two and maybe my dad eating it.

We also don't need anything super filling, we are eating at 1 and I will be making a pretty big vegan dinner for Jeremy and myself that evening.

Something we can make in advance and eat cold or at room temp.

Thoughts? Recipes? Links? Hugs?

I think quiche is good at room temp, so it is normal!

I second the quinoa salad idea. I brought a quinoa salad to Easter brunch a few years ago and everyone loved it.

I did a practice run of this (with a couple of substitutions) and it came out great. I'll be bringing it to Easter:

(I am able to get purple carrots at my farmer's market which makes it colorful.)

It is perfect at room temp.
