I really didn't need to soak six cups of almonds to make almond milk. I don't even have room to store that much almond milk. What can I do with the extra four cups of soaked almonds? Will they behave like regular almonds again if I toss them in the oven for a while? Can I make a spread even though they have skins? What's the deal?!

You can pop the skins off and then make a spread. Its a little time consuming but not too hard if they've been soaked for a good few hours. Personally I would drink
Loads of almond then make more. I can't get enough home made almond milk.

You could probably freeze them. I love eating soaked almonds straight up, but I usually stop at about 2 oz!

i know you can dehydrate them once they're soaked. if you don't have a dehydrator you could try them in the oven on "warm" for a few hours. oh, you could make raw cheesecakes like this one: http://www.rawmazing.com/raw-orange-cho ... heesecake/

I would eat them. Or chop them up and make a raw "cereal" of apples, almonds, agave, and cinnamon.... for every meal for a week or so.

I soaked too many cashews and am too lazy to something productive so I decided to share them with the birds. Oh and squirrels.

Blend them up with some sweetener, vanilla, maybe some of the milk, a little oil then pop into a icecream maker. Thats what I would do, and there are likely to be recipes for such if you google.

I freeze extra soaked nuts all the time. I generally use them up in a month or so, and hey, time saver the next time you want to make almond milk!

I've frozen cashew cream before. I bet you could freeze almond milk as well. Maybe concentrated so it takes up less room?

I don't find almond skins to be bitter or really have any sort of flavor. I think removing them is mostly for cosmetic reasons, although they might interfere with achieving a creamy texture a little -- not sure about that.

I soak about 1-1 1/2 c almonds over night then whiz them in the blender with about four cups of water and strain it in cheesecloth. Some people add a bit of vanilla or agave but I don't since I just use it to cook and bake with, not to drink. I'm pretty sure it's cheaper than buying it, especially if you dry the ground almonds and use them. I always put them aside but don't dry them well enough so they go bad.

How do you store it? And is it thickish? Like commercial almond milk? More importantly, do you buy your almonds from HFS? Or online? (Curious for $$... I know that almonds can be bought in HFS, but I was just wondering for your source.)

I refrigerate it in an old bottle or takeout container or whatever. It's a bit thick right after shaking, but separates pretty quickly.
