Hi All!

So I'm pretty active...I run about 40k a week, plus yoga, boxing, ab work, zumba with friends etc. I like to have a little snack before I work out (especially with the runs, which are generally anywhere between 10 and 20k) and I know I can do better for myself than the cookie/piece of chocolate, etc I often grab.

I was thinking of trying out a/a couple homemade energy bar recipes this weekend. Anyone got favorites to suggest? I'm on a tight budget, so I'd prefer ones that don't call for crazy flours or nutritional powders I don't already have in my kitchen... As far as extras, I've currently got cashews, dried cranberries, and crystallized ginger hanging around, so anything that features any of those would be extra awesome!

I have a recipe on my blog which calls for cranberries. You could also use cashews instead of the walnuts mentioned.

I've made good versions of these using a mixture of blended tofu and chickpea flour (with a bit of water, nooch, and salt) in place of the eggs, and either tempeh bacon or seitan bacon for the real bacon. These were developed for cyclists, but work well for endurance athletes of all stripes.
