I'm sure people have previously discussed this, but I just picked up the "Grain Brain" book, which denounces wheat, and so now I am considering trying the gluten-free thing for a while to see how I feel. The question is: what am I going to do without my wheat meats? I have developed a mild dependency on tofurky sausage and chickenless nuggets. Does anyone have any really good recommendations for gluten-free mock meat stand-ins? I have seen a gluten-free seitan recipe and now I am searching for more ideas.

I am very skeptical of the science in Grain Brain (I don't eat gluten myself, but for other reasons), but Beyond Meat is a gluten-free chicken substitute, and soy curls are great as well.

there are so many things you can do with tofu. try all the different styles.

freeze it, marinate it, crumble it, press it, smoke it, cream it in a blender........

this is something I am struggling with as well... experimenting with spirulina, chlorella and hemp as sources of protein is working pretty well but won't give you anything to chew on.

soy is definitely not an option if you're planning to follow Dr. Perlmutter's program - there's more to it than just avoiding gluten.

@jordanpattern - check out the research that Dr. McDougall references in his op-ed piece. they're all either questionnaire-based studies and/or derivitive summations of other studies. I personally don't give much weight to those types of papers because the data is either unreliable or specifically selected to achieve a desired result.

Did you read The Atlantic article? I think it shows that the data Dr. Perlmutter states is pretty unreliable.

I didn't mean to come off as a Perlmutter fanboy - I'm super skeptical of everything I read and don't follow the advice of any one person. I like to compile info from all sides and figure out what works best for me.

Honestly, unless you have a medical reason to avoid wheat (such as celiac or an intolerance) I can't imagine why you would. IT IS SUCH A PAIN IN THE BUTT.* And I have yet to see any compelling science regarding uniform wheat disavowal.

*Also the result of eating wheat for me. ;)

she talks about a recipe from "The Complete Idiot's Guide to Gluten-Free Vegan Cooking" but doesn't divulge the ingredients... i don't see a thread for that under cookbooks yet, but I may not be searching correctly.

and if you search for item B000EHW0VQ on amazon, you'll find OrgraN - a gluten free VWG substitute that apparently you can use in anything that you would normally use VWG in.
