 Post subject: What's your pb&j sandwich replacement?

I've recently given up gluten to see if it's the cause of my health problems (fingers crossed it is!). The thing I'm still looking for a replacement for is pb&jelly sandwiches. They're perfect because they're cheap, pretty healthy, don't require refrigeration, and can be carried pretty much anywhere with minimal mess. I can't think of anything else that's as filling and doesn't require lugging around tupperware if I'm running around all day or hiking or something.

So, ppk, what's your peanut butter sandwich replacement of choice?

Also, side note, how long did it take you to feel better after going gf?

I like to make nori wraps, usually with peanut butter, bell pepper, avocado, cucumber and sometimes baked tofu. They're portable and especially if there's no tofu, are fine without a fridge for a while.

I don't eat pb and j, but if i did I'd make tortillas for them. Brown rice tortillas would work if you warm them first, but they do tend to break. What about on rice cakes or waffles or english muffins? All easy to acquire.

I use Canyon bakery GF bread, cashew butter (sometimes I use pb) and homemade jam. If I dont have homemade jam I just try to use one that is low in sugar. Hope this helps.

Thanks for the suggestions! I like the waffle idea, kittee! I think I'll try making a bunch and freezing them for quick toasting. I'm trying to avoid buying a lot of gf products because of their cost.

The nori wraps sound super interesting, strawberryrock. If only I like nori! (I'm working on it. My tastebuds just don't know what's up yet.)

I personally think that PB tastes much better on rice cakes than on bread! The J part might not work as well with that though.

It's not super-portable, but I love topping oatmeal with nut butter and jelly (use g-f oats if you're sensitive to them. . .)

these are not as portable but they are my go-to snacks or no-prep lunches:

-rice crackers and jar or container of pb for spreading/dipping
-banana and peanut butter - i sometimes braing a tupperware with a big glop of pb in it and later slice banana up into the container to eat
-hummus, rice crackers, cucumber slices, & kalamata olives
-gf bread/toast/english muffin and an avocado to smash on it
-trail mix is pretty portable and filling - my favorite is walnuts, craisins, chocolate chips

Kittee has it spot on! Tortillas are cheap albeit a little bit more fat heavy than bread. I love love love using brown rice tortillas for everything.

I've been eating lots of rice cakes with pb. Pretty good, but not as filling as bread. I'll have to give brown rice tortillas a go. The corn ones I usually use are delicious when heated but pretty blech if they've been sitting in your bag for a few hours. Right now I'm waitressing and eating bites of things whenever I get a chance, so minimal mess is kind of key. Thanks for all the suggestions!

ironically, most of my health problems stopped when i gave up peanut butter. then i was diagnosed with an adult allergy to all nuts.

have have you been feeling since giving up the gluten? if you are still feeling icky, try stopping all nuts.

We like to do the PB&J on rice cakes, and use Suzie's Thin Cakes. They also come in corn, spelt, and some other flavors too.

I like to make xgfx blueberry-cornmeal pancakes and refrigerate them so the blueberries get cold. They're the jelly replacement (though you could add jelly too if you wanted). Then I put pb or almond butter in between two of the pancakes.

If you're interested in the pancake recipe, post back and I'll pull it out and post it.
