I promised my mom a maple pound cake for her birthday. I have never made a gluten-free pound cake. Also I would rather not use palm oil but is it even a pound cake without butter/butter substitute? Can I call it a pound cake if it's made of coconut oil? Help!

Ok, I think I gf-ed the pound cake in Vcon once. I'll look for my notes, if it really happened.

But maple? Do you have maple extract, because I'm pretty sure the Vcon one uses dry sugar and I wouldn't want to mess with that.

I've made this recipe from 1000 Vegan Recipes and just used King Arthur GF flour and a little xantham gum http://litasworld.com/2010/12/meatless- ... ound-cake/ It uses canola oil and granted it's been years since I've had non vegan pound cake but it tasted just like I remember!

That looks promising! I am making a trial cake tonight, I think I'll use that recipe with Trader Joe's gf flour (which I think is King Arthur relabeled), xanthan gum and coconut oil and see how it goes!

Oohh,I didn't know Trader Joe's had GF flour! Good luck with your cake!
