I've been commissioned to make some gluten free, refined sugar free, potato free, strawberry free pies for a friend's wedding. I have the crust down (using Gluten Free Girl's recipe and using cornstarch for the potato and Earth Balance for the lard, leaving out the egg--it's amazing!), but struggled a bit today with a pastry cream (I'd love for one of them to be a tart with almond pastry cream and fresh peaches). I've used Bryanna Clark Grogan's recipe for cashew pastry cream several times and love it to pieces (especially love that she offers a maple-sweetened version), but it calls for a 1/4 c. of flour to thicken, along with 1 1/2 T. cornstarch. Today I used 3 T. sweet rice flour in place of the flour and it turned out pretty gluey in texture--tasty, but not good enough for a wedding. Any other suggestions for thickening? I'm afraid that if I use all cornstarch I will get the same result.

What liquid are you using? I've found that rice milk can get pretty gummy when you try to thicken it. Oh wait, you've tried it with other flour and it worked so that's probably not the issue.

what about just doubling the cornstarch? or melting in a bit of agar when you're boiling the liquid.

I would use all cornstarch. It should work just fine.
