I have a recipe for mini-oatmeal raisin cookies. If anyone does weight watchers, yup its the recipe in the Getting Started guide. I can handle the veganizing of it Earth Balance for the butter, egg replacer for the egg. For the flour in the recipe it calls for 1 1/2 cups rolled oats, and 3/4 cup whole wheat flour. Would a similar amount oat flour work in place of the whole wheat flour? Should I add in some xanathan gum?

If I was making those cookies I would use mostly brown rice flour with smaller, equal amounts of tapioca and potato and I wouldn't add xanthan. I'd also use quinoa flakes instead of oats I've never used oat flour, so I don't know how they'd turn out. I hope the cookies are delicious!

I did just an equal sub and they turned out great. I think its because the rolled oats helped with the binding.

If you are fine with oats these sound good, but be careful since some gluten free people are affected by oats if you are going to be giving them away to people who are sensitive or something.

They are certified gluten free oats and oat flour by Bob's Red Mill and it seams as though I tolerate his oats well. Oh Bob. What would I do without you?
