None of those would add a bitter flavor, and brown vs superfine rice flour would just affect the final texture, not the taste so much.
I don't think potato starch or tapioca starch spoil very easily, but you could try tasting a little of each. Neither should taste very strong by itself.
What kind of chocolate did you use? Can you maybe post the recipe so we can see if there are any weird "way too much of that" measurements or anything?

It calls for ener-g egg replacer...sometimes that can have a weird taste.

I've noticed that some tapioca starch has a very strong off flavor. I especially find it with the Bob's Red Mill brand, and I usually love all of their flours. So, that would be my guess for the bitter flavor.
