This pancake recipe? I ran out of regular wheat and spelt flours this morning but I still have chickpea, sorghum and brown rice flours, but I don't know which one(s) to use, or how to mix them! I was wondering if y'all xgfx-ers would be able to give me some wisdom. Gracias.

I recommend chickpea! My xgfx mother makes (Isa's perfect) pancakes with all chickpea flour, and they are just as delicious as gluten ones.

(It does add that sort of eggy aftertaste, in my opinion, but it's not bad. And my mom can't even taste it.)

Update: I used the chickpea flour and they came out quite yummy! Not the same exact flavor as my usual wheat-y pancakes but not in a bad way, either. And the texture was pretty great, too!
