Hi Everyone! I am new to this site but hope you can help me out. My daughter is allergic to wheat and any dairy products. I find tons of Vegan recipes but most that are end up calling for a wheat product. Can someone please tell me what types of non-wheat flour are comparable to wheat flour? I have tons of great recipes but I'm not sure how to substitute. She's going to turn into a rabbit if I keep feeding her like I currently am! She loves bread but I can't find one that isn't like eating a brick! Any great recipes for bread would be appreciated too.

Is she GF and vegan or are you only concerned about the dairy allergy? Udi's bread is gluten and dairy free (but contains egg whites), and much softer than most commercially available GF/vegan breads. Schar bread is good too and is vegan, but it doesn't keep very long once opened.
The flour substitution depends on what you are doing. For baking, I use pre-made GF flour mixes. My favorite is Wholesome Chow. For making a roux or thickening something, I use white or brown rice flour.

If you hop over to the blog/recipes portion of this site, you can click on "gluten free" recipes. They're mostly main dishes, soups, and salads and use staples like beans, lentil, rice, quinoa, and tofu as well as fresh produce.

She is not Vegan. Her "real" mom would freak out if I didn't give her the option of meat. But for the most part she is Vegan and really doesn't like any type of animal products, which makes it a little easier on me when I am fixing meals. Where I live there just don't seem to be a lot of options for Vegan and wheat free, but maybe I just haven't found the right store yet.
Thank you both for the ideas. I will have to look them up and see if any of my stores carry those products. Looks like the recipe page is my next stop.
