 Post subject: deglutenizing vegan pie in the sky?

Hey- Have any of you had any success with taking a pie recipe from Isa and Terry's new Vegan Pie in the Sky and deglutenizing it?

They don't really include any viable gluten free pie crust options besides the almond crust which I can't make since my sister (who I live with) is allergic to nuts.

Do you just use a gluten free flour mix (and maybe some xanthan gum) and replace it one to one for the wheat flour? (If so what mix?)

Or is there a good gluten free pie crust recipe you have in your arsenal?

i like to use gluten-free girl's pie crust recipe (subbing in earth balance sticks for the butter called for): http://glutenfreegirl.com/were-having-a-pie-party/ (she gives a link to her gluten-free flour mix recipe, too) and i have had great success with it. the recipe i linked to makes for 2 crusts, so halve it if you need to.

she includes superfine brown rice flour, and i've never seen that in any stores (including the multiple whole foods and natural food stores nearby) - do you use that/think it's necessary?

i have made it before without and it did turn out grainier. so i recommend super fine brown rice flour. Authentic Foods has it (i order online) although i've always wanted to try running brown rice flour through a few cycles in the blender and see if that gets it more towards super fine. the super fine is kinda pricy, but i only use it for crusts and raviolis and such. kinda delicate things. everything else gets just regular brown rice flour.

I haven't seen that pie crust recipe so thanks, Jessy!

I can buy gf pastry so I often use that and I did try the pastry recipe from The Gluten Free Vegan cookbook but it came out thin and hard.
