I'm having company over for Christmas Eve, and need to cook an *amazing* xgfx menu (my company is gluten-free + my family is vegan = xgfx Christmas Even dinner). We're having black bean tamales as the main dish, but am looking for other dishes to go with it. Also, my family is severely allergic to tree nuts / coconut. Any ideas? What are you cooking for Christmas dinner?

How about a few salsas to go along with the tamales, some sort of salad with avocado and a rice dish?

Having a few different salsas to go with the tamales is a fabulous idea, thanks Kittee! A salad with avocado is a good idea too.

I'm looking for a really interesting rice dish, maybe Donna Klein's Cuban rice and beans (black beans / rice / pineapple in her Caribbean Vegan cookbook). The dessert has me a little stumped, I suppose I could be healthy and just do fruit or something. The tres leches has coconut which my family is severely allergice too.

we absolutely love Lazy Smurf's gallo pinto. it's one of our favorite bean & rice dishes. the cuban rice you mentioned sounds really yummy, too! there's always the Quinoa Salad with Black Beans and Mango from Veganomicon.

mexican wedding cakes might be yummy for dessert. i found this recipe that looks pretty yum. oh, or what about gluten-free mexican hot chocolate cupcakes!?!
