I saw this somewhere in the last few weeks and now can not find it on either of their sites or in Twitter? Does anyone remember seeing this? It was a recipe that one of them posted for making up your own gluten-free baking mix.

The old boards don't seem to be avail. but Isa might notice this post and share her mix. There are also suggestions in both VCTOTW and VCIYCJ.

For the VCTOTW gf cupcakes: 1/2 C rice flour, 1/2 C quinoa, 1/3 C corn and 1/4 C tapioca/arrowroot (for chocolate leave out the corn and replace with cocoa).

Thank you - it was not on the old board - it was on either the PPK or Terry's Vegan Latina website but a search function did not pull it up. It was just mentioned in the last couple of weeks - I should have printed it out right way!

Thank you, happyfaced, for posting the mix! I've been vegan 8 years, but am new to gluten free - it has been recommended to me by doctors. I have Crohn's and Lyme and after only a short time on the diet, I am noticing improvement in energy and pain levels!

i REALLY-experimented last night with kittee's carrot cake recipe from PT and used the following flour mix with reasonable success. this was really punk rock, so i think it was dumb luck it worked.

1 c. quinoa flour-(i ground this in my coffee mill)
1/2 c. millet flour-(also ground)
1/4 c. tapioca flour-(kraft instant tapioca also ground)
1/2 c corn meal ground in coffee mill
1/4 c. potato starch
1/4 c. NRG egg replacer (it's just a mix of tapioca and potato starch!)
3/4 c. ground GF ice cream cones-(yes you read that right) note: it takes a LOT of crumbs to make that much flour. crush 'em up and grind them in the food processor or coffee mill until they are dust. these are also made from a blend of GF flours.

ps-did you know that there's xantham gum in canned coconut milk? this is helpful when you don't have any on hand.

now--the cake batter wasn't batter so much as it resembled cookie dough. i was very nervous, but proceeded with faith. it effing worked. a nice, moist crumbly cake with slightly crunchy exterior. whooda thunk.

damn, jewbacca. that's so awesome! the cake sounds oh-so goooood!

also, i love that you put ground gluten-free ice cream cones in there. i often times take xgfx rice cereal and grind it up into a flour of sorts and add it into dessert recipes, too. w00t!

I FOUND IT -it was a "handout" from the veganlatina.com site and titled,
"Isa & Terry's Gluten Free Mix" - here it is -

1/2 cup almond flour or coconut flour
2/3 cup white rice flour
2/3 cup quinoa flour or millet flour
6 tablespoons tapioca flour
2 tablespoons ground flax seed

Mix all ingredients together prior to measuring and using in recipes

you know, cgbugs9, i'm not too sure. but i make my pie crusts using this recipe: http://glutenfreegirl.com/were-having-a-pie-party/ and the recipe for her gluten-free mix is here: http://glutenfreegirl.com/gluten-free-h ... king-2010/

we made the Vegan Pie in the Sky pumpkin pie this thanksgiving and used that pie crust recipe and it was a huge hit!
