I've been trying to find something else to do with my box of mochiko besides kittee's sausages (which were really good). I see plenty of recipes online for mochiko brownies, but none are vegan. My tried and true recipe is the New Farm one, so I am wondering if anyone has tried it with mochiko instead of wheat flour. Suggestions?

Well, I got impatient, went for it, and subbed mochiko for all the wheat flour. It worked pretty well. The brownies are definitely a bit chewier than usual, but I like them that way. I may try again with a blend of GF flours and a bit of flax seed too.
I usually get Grainaissance mochi ready made (my store just stocked the cinnamon raisin flavor!), but I might try the mochi ice cream too. I have bought it in stores in the past and was not impressed.
