I treated myself to this petits fours pan a few years ago and loved baking with it, but now I'm concerned that this pan has too many crannies for gluten-free baking. Anyone have any recipes that might work well with this? I'm rather inexperienced with gluten free baking so I'm afraid of doing crazy experiments and wasting lots of ingredients. Kind of tempted to make cashew cheesecake in the pan but don't know how that would work out - maybe if I floured it instead of oiling?
