 Post subject: Gluten Free baking in my fancy cake pan?

I treated myself to this petits fours pan a few years ago and loved baking with it, but now I'm concerned that this pan has too many crannies for gluten-free baking. Anyone have any recipes that might work well with this? I'm rather inexperienced with gluten free baking so I'm afraid of doing crazy experiments and wasting lots of ingredients. Kind of tempted to make cashew cheesecake in the pan but don't know how that would work out - maybe if I floured it instead of oiling?

I'd hate to post and be useless. I was thinking the other day that Babycakes NYC has some shaped things but mostly like mini brownies and the like, not made within a wrapper, so maybe it's just a matter of properly oiling + flouring the pan just like usual.

Another article references cakes that don't bake completely in the center, when made gluten-free, and I'm thinking your mini cake molds may fit the bill even better because there's less space for the cake to fill and the heat will distribute more evenly.
