I have been wanting to master dumplings for a long time, and I've worked only with regular wheat recipes before, but with iffy results. I'd like to know if anyone knows of a tried and true recipe with an amazing and interesting filling (something with butternut squash or sweet potato filling maybe?) because mushrooms aren't my thing, and the last filling had tons of 'em.
Are potstickers and gyoza (Asian dumplings) the same thing? I did a search in Japanese and found a bunch of recipes using rice flour. Do you want me to write one out for you? They look easy and don't have too many ingredients. The pictures look great too!

Gyoza and potstickers are slightly different, but mostly only because of what is put on the inside I believe, potstickers have a more chinese flavor profile... I think a gyoza also tends to have a pretty, ruffley seal, where as potstickers are smooth.
