I am recently gluten free due to a diagnosis of autoimmune thyroid disease. What do you do with buckwheat? I live in Thailand at the moment so was only able to locate it as flour. Would love a good buckwheat pancake or crepe recipe...or any other tried and true recipes.

MacGyver'd a vegan buckwheat pancake recipe yesterday with smooshed overripe banana for egg and full-fat coconut milk + spoon of vinegar for the buttermilk. They turned out really, really well and could not stop eating them with jam and agave standing in for maple syrup, bc it is prohibitively expensive here. I have to say that the recipe called for 1/2 regular flour and 1/2 buckwheat, and I used all buckwheat instead and they worked fine.
Now, I really need a recipe for savory buckwheat crepes, like the ones they make the savory crepes out of at French creperies. I imagine endless possiblities with using these to contain savory ingredients.

Also, if anyone has any advice, I would also like to know if it's possible to make the buckwheat pancakes in a sourdoughy way. I think they would be even better.

sounds like you came up with a pretty similar recipe, but from: vegetarian cooking for everyone, buckwheat flapjacks. .75 cup buckwheat flour .75 cup other flour 1 tsp baking powder .5 tsp baking soda .5 tsp salt .25 cup molasses 2 egg (substitutes) 1.75 cup buttermilk (1 Tbl vinegar per cup regular milk)
mix wet. mix dry. mix together. let rest. make flapjacks.
