I have a good size bag of rice gluten flour that I am going to use for vegan chinese turnip cakes. It will only use a small amount for that recipe. So I went searching for Rice gluten seitan and found an interesting site. Any tried to do make rice gluten seitan before? Please share your results and how it tasted if you have.

I just tried to make the first beef sausage recipe they are steaming right now(for the link I posted). My mixture came out too wet I think because I didn't adequately drain my lentils.
Do heed the warning you won't see until the end of all of the recipes that says not add additional water to recipe. They say you can add oil one drop at a time or onion juice sparely. I tried to fix my problem by adding more rice flour which was not adequate. The Besan is noticiable in this dough that (slightly metallic taste) but in this case is not really unpleasant it pairs ok with the spices. I ended up adding oats which gave it a less sticky more workable texture. I think this batch will likely end up being crumbles.
I will post more feedback later. BTW if you need Mushroom Soy Sauce I finally found it at an Indian grocery. It's a nice sauce I think it will be useful for flavoring other recipes. It's thicker than soy sauce.

They are done. They taste like and resemble breakfast sausage and if they were bigger they could be nice on bun. They do taste good with ketchup. The besan isn't noticiable after cooking. Possibly due to my error they are dense and a only slightly moist. There nothing spongy or tough about them which can happen with wheat meat. I do like them. They won't fool any ominvores but anyone open to veg foods will probably enjoy them.
