I'm entertaining a lady-friend tomorrow and she's gluten-free.
I read somewhere that buckwheat is ok for gluten-free people; does that mean that soba noodles can be done?

Most soba noodles contain wheat and buckwheat. I believe it is Eden that makes an all-buckwheat type. They also make a normal type, so you have to look. They are like 7 or 8 dollars which is ridiculous, but tasty. Rice noodles are also a good alternative!

The Eden all-buckwheat noodles ARE pretty tasty, but I recommend only using what you're going to consume in one meal...the cooked noodles do not keep well in the fridge. I was pretty sad when my noodle dish turned into sludgey paste in the fridge overnight.
