Hi there!

I am on a quest for a fantastic gluten-free Gingerbread Cookie recipe. Could you possibly help me?

Gingerbread cookies with molasses are my most favorite holiday cookie, but my standby recipe has always included whole wheat pastry flour. I've been gluten-free for over a year now and need to find an alternative. I know I could probably just sub Bob's Red Mill gluten-free mix (which I probably will try as well), but I was curious to see if any of you lovely PPK-ers knew of a recipe.

post your recipe. but, i have found that you can make great cookies by following a reg recipe and subbing 3/4 of the flour for oat flour and 1/4 of the flour with sorghum and a half tsp of Xantham.

I made the gingerbread cut outs from Vegan Cookies Invade with rice flour and they were fantastic. One non-vegan said they were the single greatest cookies she's ever had.

Cool - that's why I'm here - gingerbread cookies! I have to find rice four though - mine expired and I threw it out and now I only have and can only find Bob's flour mixes and no sorghum or xanthum.

Just rice flour? I'm off to investigate...

ETA: I obviously can't read and made the blackstrap ginger snaps instead, but the rice flour did work. In its own rice-floury kind of way.
