Hey!

I need to make a gluten free version of the Amazing Mac & Cheese sauce from the Uncheese Cookbook. I'm using it for Welsh Rarebits! It has 1/2 a cup of flour as well as the usual nooch sauce suspects - soya milk, olive oil, mustard.

I have soya, tapioca, quinoa & chickpea flours. Do I need to go back to the store to get a gf mix or will I be able to make something yummy with these?

I would use chickpea flour, personally. I've had success using it in rouxes, but I don't think I've used that much before.

Thanks j-dub, I just had a look in Isa does it & it's what's suggested there too so I'm gonna run with it!

Just thought I'd update y'all, I made it with the chickpea flour and it was way better than the regular non gf version!

Yeah! I almost always use chickpea flour for any cheeze sauce! I think it is way better flavor over wheat, on top of better nutrition.

I also love brown rice flour for any cheese sauces or gravies.
