Although I am not gluten intolerant, I recently picked up the Flying Apron cookbook to try and give baking a go for the first time since I've recovered from an eating disorder. A more health-concious cookbook may be just what I need to get back into my baking groove, and I am really very excited. (I splurged on matcha powder to make muffins!)
That said, one concern of mine is xantham gum. I do my best to avoid GMOs, at least in my own home, and from what I know it's made from bacteria grown on corn. Does this expose the consumer to GMOs? What are the most reliable brands for those of us trying to avoid them?

i suppose you can search for organic xanthan gum. (i have no idea if that exists.) also, most of the GMO corn is used for animal feed. sweet corn i don't think has any GMO varieties. i have no idea if the xanthan gum growers use sweet corn or animal feed corn though.

Bob's Red Mill sells xanthan gum I think? That would be GMO free for certain, since I don't think BRM goes in for those shenanigans.
