Fresh homemade gluten-free vegan pita - ripped open while still steaming!
A little puddle of more Lemon Tahini Dressing
Fresh veggie sticks: carrot, celery, cucumber, radish
Homemade hummus
Homemade dolmades stuffed with brown rice, lemon zest & juice, fresh dill, and pine nuts
Roasted at home red peppers
Assorted olives - the only part of the dish I didn't make from scratch.

Actually, I don't think I did put that on my site. I'm not a super-secure gf & v baker yet. It's a work in progress. But, this is what I did.

I warmed a cup of water, added 3 Tbs sucanat, 2 of applesauce (my instead of oil) and a packet of yeast and set it aside to proof. While that was going, I soaked a couple of Tbs chia seeds in 1/2 warm water I use chia seeds instead of flax eggs. And while that was going, I measured out a cup of each of several types of GF flour (it just has to be something higher in protein, something higher in starch, etc. whatever you want as long as it's a mixture. I think my today's combo was quinoa flour, tapioca flour, garbanzo flour, and sorghum flour.) Added 2 tsp of salt and a pinch of cumin. Then combined my wet and dry. I set it aside to rise over a bowl of steaming water. After it rose, I portioned it into 8 little balls and rolled them out. Then I warmed up my baking stone in a 425 degree oven. I baked them 4 at a time, for 10 minutes on each side, total of 20 minutes each. I set them on the grates of my stove to cool for a minute while then next batch got started. Dished up my plate and dug in. Hope you enjoy!

how funny - but I think it's actually china. from Germany? via a garage sale - 20 years ago. LOL!
