Family approved, as did I, although I was surprised at the outcome (assuming the extra baking powder still isn't enough to leaven the heavier flours in a GF mix? I'm no scientist...). Even dropped in a few chocolate chips, right before the pancakes set, at my boy's request (rich and yum, although I prefer traditional pancakes myself).
I do a Frankenrecipe of the puffy pillow pancakes and the xgfx buckwheat quinoa pancakes from Vegan Brunch! They come out a little puffier than non-gf pancakes - though not as puffy as the non-gf puffy pillow pancakes. That might be worth trying if you want a puffier pancake!
Now I want pancakes.
