 Post subject: GF/Vegan Pancakes = happy omni family!

My GF omni boy requested pancakes for dessert. My daughter adores the Puffy Pillow Pancakes from the blog. So I decided to whip up a batch of these, using the Trader Joe's gluten-free flour mix (my husband had bought the bag, which was sitting without a purpose for a few months...).

I let the batter sit, and it did its thing (bubble, foam, etc) like usual. However, the end result was NOT a thick batter, but more of a crepe-y batter, thin but still bubbly. I ladeled it onto a hot griddle rubbed down with coconut oil. There they cooked and remained thin and crepe-like, only with a lovely lattice-y effect from the bubbles. The coconut oil resulted in a slightly crisp, lattice-like top, and the pancakes were as delicious as ever!

Family approved, as did I, although I was surprised at the outcome (assuming the extra baking powder still isn't enough to leaven the heavier flours in a GF mix? I'm no scientist...). Even dropped in a few chocolate chips, right before the pancakes set, at my boy's request (rich and yum, although I prefer traditional pancakes myself).

Delicious!

I do a Frankenrecipe of the puffy pillow pancakes and the xgfx buckwheat quinoa pancakes from Vegan Brunch! They come out a little puffier than non-gf pancakes - though not as puffy as the non-gf puffy pillow pancakes. That might be worth trying if you want a puffier pancake!

Now I want pancakes.
