I made Isa's pumpkin waffles this morning with a pre-mixed GF flour (Domata in a blue box, Walmart has it) that I have previously had perfect results subbing for white all-purpose flour. They stuck to my waffle iron like mad, in spite of me oiling the shiitake out of it with my oil sprayer in between each waffle. I tried following the light on the waffle iron, it split open when I opened it, so next time I waited until it stopped steaming with the same result, then I waited even longer, and finally until it was almost burned and still it wanted to split in two because it was so stuck to the waffle iron. I haven't previously had this problem with my waffle iron and it also has a non-stick grid, so this is strange.

They were very tasty, just wound up coming out in two pieces to be folded over themselves. Didn't even need syrup. I'd just like to be able to make them actual waffles to freeze for later, instead of parts.

I saw a comment on the recipe that said they had made them with GF flour and they turned out beautifully, so I'm not sure what I did wrong here.

Anyone else tried this recipe with GF flour? What flour did you use?

Are these the ones from VWAV? I've gf'ed that recipe with a homemade gf mix, Cara's Glueten-free Baking Mix from the blog Fork and Beans. I add 3tsp xanthan gum to the mix.

Yes, it's that recipe. This blend already has xanthan gum. Ingredients are as follows... Rice Flour, Corn Starch, Tapioca Dextrin, Xanthan Gum, Rice Extract.

I don't know what the problem could be, but the mix I use is brown rice flour, sorghum, potato starch, and arrowroot.
