I'm cooking for a gluten-free lady on Friday, and I still have basically no idea what I'm doing. I might make a bean and polenta lump thing using Miyoko's Unturkey spice blend.
Also, does anyone have any ideas about stuffing?

As long as there are a fuck-ton of roast potatoes, that's the main thing.
Stuffing's mainly about the seasoning, so maybe quinoa with sage and onion, browned off in a shallow dish to get a bit crusty?
Ack, I'm no help, I just like to imagine as many people as possible eating roast potatoes.
