My partner and I want to try going gluten free for a month or so to try and eliminate some concerns I have allergy-wise. My allergies in general have gotten worse over the last year or so (or enough for me to notice) and one trigger seems to be bread/pasta/tortillas, but I'm not really sure.

Overall I know how to do this - eat rice and veggie curries, salads, etc. But I rely so much on pasta for easy meals.

Anyone have tips for starting out with the gluten-free thing? And easy lunch/dinner ideas that won't leave me wishing for a noodle?

I'm mostly wheat free atm, can only tolerate it in small amounts. I've been relying on GF pasta, I actually find it more filling than wheat pasta and doesn't spike my blood sugar levels like wheat pasta did. I find it really handy with store bought pesto and some veg & protein mixed in. Rice is very nice with pesto too.

i was doing GF for a few weeks here to try to figure out some gastric problems. lots of beans and rice. gallo pinto is one of those things i can have in the fridge and eat every day. (with a banana and hot sauce)

I'm gf and low-carb (50g or less for 6 days + one day unlimited re-feed) so most of my meals are pretty repetitive - about 6 servings of 2 or 3 different veggies, some fat and a protein chunk/burger or beans... sometimes it's salad, sometimes it's soup, sometimes it's plated.

on lazy days i'll just do a smoothie with protein powder, fat and some veggies.

on my re-feed day i'll do white rice, quinoa/corn boxed pasta, gf pancakes or biscuits and/or sweet potatoes.

sometimes i'll spiral cut sweet potatoes or zucchini into noodles - they taste really good but it isn't really a convincing pasta replacement.

I've been experimenting with gluten free soy free for a few weeks due to thyroid woes. Last night I had split pea soup and pure cornbread. I love homemade soups. Some of my favorites are: cabbage/potato/tomato/saurkraut/red lentil; carrot white bean curry soup; cream of wild rice/potato/leak; chickpea and sweet potato soup.

I like to make wild rice, let it cool, then add walnuts, dates, celery, carrot, and onion and add a dollup of maple syrup for a cold salad that is very filling for lunches.

I work with millet a lot and find it goes well with heavier dishes like chana masala, winter vegetables/lima beans/rice flour gravy, that sort of thing. I also add it to a crockpot along with apples or applesauce, cinnamon and other spices, and some water/almond milk for a creamy hot cereal in the morning. Or sometimes I make a huge batch and then have it during the week for breakfast with frozen thawed berries, seeds, and almond milk.

For savory breakfasts with a little more protein, I like chickpea flour pancakes/omelets with loads of leafy greens, salsa, and veggies tucked inside, maybe even nutritional yeast sauce poured over it. Or I scramble potatoes and veggies and chickpeas with seasonings.

I've been using sweet potatoes and potatoes a lot. I like to make sweet potato (chunked), kale, and black bean curry with coconut for a meal. Or baked potatoes topped with a sauce, broccoli, onion, etc.

Smoothies are another breakfast favorite of mine.

When the bread/flour cravings hit, I make cornflour tortillas (very easy, just mix cornflour and water) and add in some kind of bean/refried, salsa, lettuce, taco type seasonings. I love homemade cornflour tortillas and have my own tortilla press to make them now.

I gave up on gluten free. I did it strictly for five weeks and had the worst bloating and digestive issues. I would be terribly constipated and then suddenly have explosive diarrhea five times a day for a week. And the bloat was fierce. In tracking my nutrient intake, my calories were equivalent but my fat intake increased a lot and protein decreased considerably. I also found myself eating more corn based foods and I suspect I have some kind of intolerance to corn. I haven't had bowel issues in years so it was strange. I am still keeping gluten and soy intake less but not out completely. What a crazy experience that I would feel so much worse cutting out gluten and soy! I was also having dull headaches all the time. I read that people go through detox or something like that, but for five weeks? I don't know.

I love Tinkyada GF pasta with a jar sauce and beyond meat beefy crumbles. It's the perfect gf pasta with a vegan meat sauce.

Also I like doing baked potatoes in the crock pot and then topping them with steamed broccoli and melted daiya cheddar slices.

That normally helps when I'm craving noodles or starch in general. There is also Namaste brand Mac and cheese that is gf and pretty damn tasty. I normally add nooch and seasoning to it and serve it with baked/breaded tofu. I bread tofu with corn meal and it works really well. If you want it supre crispy you can pan fry it.

I was strictly gf for 2 years but I've been cheating a lot lately and really need to get back to it. My body feels better when I'm gf because for me it just causes a lot of joint pain and discomfort in my back and hips. Sometimes it sucks being gf and sometimes I don't care at all. Just depends on whether I'm eating out a bunch or cooking for myself.

I would also suggest you get real comfy with Asian and Mexican dishes. Those cuisines are super easy to make gf. Rice noodles are awesome! Oh and making noodles from zucchini, carrots, and other veggies is really fun and perfect for hot weather which is coming.

Oh man, I want to try this! I've not seen it at the HFS, but I'll look next time. . . I really like the Namaste broccoli cheeze soup cups for a quick meal/snack (granted, I don't think I ever had broccoli cheddar soup as a pregan, so I don't have any basis for comparison. . .).

Spaghetti squash, and zucchini noodles are also good options as pasta-sauce-carrying devices. Although I think they're tastier/ more satisfying when I view them in their own right (as in, with the mindset of, I'm eating a vegetable with a vegetable-ish taste/texture, rather than a pasta substitute).
