A colleague is GF and I would like to bake a cake for the whole team, but I have never even thought about GF baking before.
Any suggestions for the easiest cake/pie I could make that's as novice-proof as possible? I bake extensively from Isa&Terry's books, but always using regular flour.
Any tips & tricks and things I must remember?

I suggest cupcakes instead of a whole cake. With GF things you sometimes have to, as my GF friend put it, "bake the crepe out of them," way longer than the recipe says. When you're doing that, I think cupcakes might bake more evenly than a cake. Both GF recipes (chocolate & vanilla) in VCTOTW are good, but they call for several different flours so I don't know if you want to bother getting all of those.

If you don't care if it's not an actual cake, I forget the name of it but there's a chocolate-raspberry torte thingie in VPITS that is really good and you can make the GF crust.

One more tip from my GF friend: lots of GF recipes call for xanthan gum, and she says you can leave it out.

There are gluten free cakes in Vegan Eats World that don't require any special flours. I have made the ethiopian flourless chocolate torte for people several times now, and I would say it's reasonably fail-safe.

I've had great success with the pb blondies and espresso brownies from VCTOYCJ just subbing gf flour mix for the flour. I've just made my first proper gf cake, using this recipe: http://www.godairyfree.org/recipes/vegan-gluten-free-mocha-cake. I haven't cut into it yet (it's also for my office), but the crumbs that fell off tasted good and it held together (unlike some previous efforts at gf layer cake - it seems like the xanthan gum really is necessary).

Thanks all! I ended up making the Strawberries and Kiwi tart from VPITS using the Press-in Almond crust and subbing gf flour in it. It was delicious!
