If you were going to make the tomato scones from Vegan Brunch gluten free how would you change up the recipe? Ideally I'd like to do a straight switch of the flour to a g/f mix and then what? I feel like I need to up the liquid?

Google's suggesting I keep everything the same and add 1/4tsp xanthan gum, how does that sound?

Xanthan gum helps. The other big factor is what gf flour(s) you use. Some mixes work better than others in different things.

Yay! Thank you! I'm gonna run with it, I'd rather make not-so-perfect gluten free scones that everyone can eat than scones one person won't be able to eat!

I've used that flour before with a little xanthan gum to make gluten free cake and it worked fine. Good luck :)

Thanks Rosie, I've never used a pre-mixed flour for g/f cakes I usually make the one from VCTOW but it seemed like it'd be all wrong for scones!

I used the Dove's Farm mix plus the xanthan gum and they have a thumbs up from me, Nick and the friend who's staying with us. Now I just need to see what my wheat free friend and my vegan chef friend (Eeek!) think tomorrow!
