do you have a favorite gf veggie burger recipe?
Oh MAN! Veggie burgers are my favorite super-fast thing to make. You can pretty much put anything in a food processor and make a burger out of it. My favorites are the chickpea burger (I use a perversion of this recipe: http://veganizzm.wordpress.com/2011/11/07/242/
) and the white bean/kale (or any green)/walnut/oat burger (throw all those things in the food processor along w/ some cooked garlic and onion and a bunch of spices). I've also done tempeh burgers.
I don't really use recipes. I am serious about throwing anything in the food processor and making a paddy out of it! These are the things I most often use. You can use any combo of these things:
1) pick one: tofu, tempeh, or beans
2) pick one: kale or parsley (or any green)
3) garlic and onion and/or scallions (i always use these!)
4) GF oats, walnuts, or chickpea flour (any or all...binds everything together)
5) herbs, spices, salt, pepper (use all!)
Then blend. Then pan fry. The end. Prep takes 10 mins including cooking the onion/garlic. The trick is to refrain from flipping the burger until one side is completely browned. If you save the extra batter in the fridge, it's even easier to use when it's cold. I never plan ahead, though, so I usually end up using it warm.
