We are baking muffins for my son's kindergarten Thanksgiving celebration, and they've put out a call for gluten free (and egg free - yay!) corn muffin recipes. Anyone have a fave that doesn't require a large ingredient list? I think they are fine with going out to purchase a couple of alternate flours, but I'm trying to keep it relatively simple as they are doing this in class. I've already given them a cranberry muffin recipe that uses brown rice and garbanzo bean flours, so a recipe that also uses one or both of those would be a bonus, but not a requirement.

i use one from simply vegan that is basically brown rice flour, cornmeal, maple syrup, baking powder, soymilk (or whatever milk you want).

ugglog - this is a great site, isn't it? I've learned so much about cooking from the folks here!
The cranberry muffin recipe I used is from The Flying Apron Bakery Cookbook. This is the only thing I've tried so far but they came out great!
