Anybody got ideas on how to make this gluten-free? I was thinking chickpea flour but I'm still not sure what to substitute for the bread crumbs.

It has to remain low-fat! Thanks for any help.

I've seen gluten-free panko/ breadcrumbs at a few supermarkets. I don't know how they are, or if they're vegan for that matter, but it'd be worth a quick look.

If you can find fairly coarse cornmeal, that works pretty well. Gluten-free cous cous works great but soak it first otherwise it's just too crunchy.
