I just received the Pamela's Products chocolate cake mix for free, so I figured we'd give it a shot. Although the ingredients are vegan, it calls for two eggs (plus oil and water). What should I use in place of the eggs?

The Chocolate Cake Mix works great with all kinds of vegan egg replacers. If you have one that you've used and enjoyed, it will probably work great. Also, for a truly rich, fudgey and, yes, light and fluffy cake, substitute milk with coconut milk. You can use light or regular. It's my personal favorite way to bake with this cake mix.
