I've only baked GF a few times so far. Each time I have I've noticed a slight bitter aftertaste to the gf baked goods. Does anyone else notice the same thing? I think each recipe has called for sorghum flour. What do you all think?

I haven't personally baked anything GF, but went to the local GF bakery here to try out some baked goods and every one of them had a bitter, gritty taste.

I've been baking GF for a few years now and have only noticed the bitter taste when I used rice flour or bean flour (fava, garbanzo, or soy). I use sorghum almost exclusively now and think it tastes the most like wheat flour to me. Sorry I can't help, maybe it was another component that was the issue?

I think it does depend on the flour mixture. Kitteh and I have this theory that a lot of companies don't have taste testers for gf products and just assume if they slap the words "gluten free" on them, we'll buy them. And a lot of them don't mix flours, they rely too heavily on one or two. My baked goods generally have at least 3 different ones to balance out texture and taste.

I never baked with a store-bought gf mix, but things made with quinoa flour sometimes taste bitter for me.

i've noticed tapioca flour and millet can be bitter sometimes. the sometimes especially refers to bob's red mill tapioca. xo kittee
