I'm having a killer muffin craving. Help me! What's your favorite muffin?
I have Bob's GF mix, sorghum, brown rice, teff, a teeny bit of chickpea (like 2 tbsp, maybe) and xanthum gum.

I LOVE the toasted coconut chocolate chip ones and bakery style berry muffins from Vegan Brunch, so good.

I need GF muffins though so tried and true GF recipes :)

I don't have any particular favorite GF muffin recipes, but I've never had trouble subbing Bob's GF AP flour + xanthan gum in any muffin recipe. Muffins are so foolproof! and I'm the worst baker in the world, so that should say something ;)

i have had good luck getting the gluten outta these: http://www.theppk.com/2009/12/gingerbread-flax-muffins/i think i used about 3/4 cup oat flour and 1/2 cup sorghum. you might need to add a little extra flour and a half tsp of XG...you could add a little potato starch if it needs more flour...i use fresh ginger in place of the powdered (i don't like that stuff). also, i usually don't have molasses on hand, so if that's true for you, just use maple syrup, but maybe reduce the dry sugar a bit... xo kittee

Here's my go to recipe I created for the health food store.. made these muffins every morning
1/2 c golden flax meal 1.5 c rice milk 1/2 c oil 1 t vanilla 1 t balsamic 1 c sugar 2 c bob's AP mix 1 T baking powder Whatever spices you want Whatever fruit/nuts you want
Mix the flax, milk, oil, vanilla and balsamic together with the sugar. add the dry ingredeints/frutis/nuts and stir really well
Spray a muffin tin.. bake at 375 for 17-22 mins
They are super good!

They are super good! if they're good enough to be near the madeline's macaroons they are good! i'll try this today i think :) thanks!
