I haven't tried these yet, but I'm hoping to test them out and make them for an upcoming bake sale, probably without the pom:
Vegan Gluten-free Samosa (makes 2 patties)
Ingredients:
Filling
1/4 Pomegranate
- 1 boiled medium potato, peeled when cooled
- 1/2 cup frozen peas
- 2 tbsp coriander
- 1 tsp cayenne
- 1 tsp turmeric
- 1 tsp salt
Dough
- 1 cup Chickpea Flour (garbonzo bean)
- 2 tsp baking powder
- 1 tsp salt
- 1/8 cup water
- 1 tbsp oil
Prepare Pomegranate:
In separate bowl of water:
- Place Pomegranate in bowl
- Break it up in water
- Remove pits from fruit
- Remove fruit from bowl
Filling (in a large bowl):
- Place potato in bowl and break into chunks
- Add frozen peas, coriander, cayenne, and turmeric
- Blend mixture
- Add pomegranate fruit to potato-pea mixture
- Add salt
- Mix together
Dough (in a separate bowl):
- Add Chickpea Flour, baking powder, salt, water and oil
- Knead dough keep adding small amounts of oil and water until moist but not sticky, forming a ball easily
Prepare Samosa Patties:
- Flatten dough
- Place filling on-top of flatted dough
- Fold over edges repeatedly until creating a large patty
- Break in two, forming two patties

Bake in oven approximately 350 degrees F, for 15-25 minutes until lightly browned
