hey guys! two of my awesome coworkers just found out that one of them is wheat-insensitive and the other is celiac. we work at a very nonGF coffeeshop, and they are missing out on pastry deliciousness! i want to make them some banana bread... any good recipes?

(i have garfava flour, mochiko, xanthan gum... i think that's it so far, so bonus points if you know recipes using these, but i am willing to buy other specialty flours too!)

I like the PPK recipe! I've made it with all brown rice flour and it was good but now I'd probably use 1/4C tapioca and the rest brown rice. Or buy a brand of gluten free flour mix and just use 2 cups of that, if that'll be easier for you!

Great! I actually have tapioca flour already, so i might just buy some rice flour for now! I am so excited to try it! I won't be seeing them again for a few days, but once I do make this, I'll definitely post in food porn. Thanks for the recommendation!

Google "Joy's Banana Bread" and you will find a great one. I once baked a loaf of that damn bread every day for a month.

Does anyone have a GF banana bread recipe that has nuts and no added sugar (or, if anything, just some agave)? Sorry, I know that's a lot to ask for, but I am trying to make a bread to accommodate several friends' preferences (I'm vegan, my boyfriend is gluten-free, my friends like nutty bread, and my boyfriend won't eat added sugar that is not either agave or fruit-based). Thank you SO much!

I did this really recently with the marbled banana bread on here http://www.theppk.com/2011/11/marbled-banana-bread/

I used a gluten free flour blend that was white rice flour, tapioca, sorghum and coconut flour and also used some almond meal and xanthan gum. I did 1/4 cup agave because the person wanted it to be not very sweet at all. i upped the oil to 1/4 cup because i felt like it needed it. i wish i had the exact recipe, but i don't know what i did with it. basically i couldn't find a recipe online that really suited my needs, so i used that recipe as a base. i also didn't do the chocolate part.

tl;dr not actually helpful instructions. sorry.
