A couple of lovely friends of mine have offered to graciously help me weed my vegetable garden. Tomorrow! One of these friends is quite the (gf) food connoisseur. I need delicious and quick gluten-free snack ideas to serve along with mint lemonade and gf chocolate chip cookies.
I'm totally scatterbrained this week, so your suggestions are greatly welcomed!

So you don't have to buy ingredients you might not otherwise use, it might be easiest to stick with things that are naturally gluten free. Fruit salad, vegetables and hummus, corn or rice tortilla chips with salsa, summer rolls w/peanut sauce/duck sauce/hot sauce depending on the fillings (if your filling or sauce uses soy sauce, check for wheat free).
My newest summer rolls were roasted sweet potato sticks (baked sweet potato fries that I let get cold), green onions and the rice noodles in rice wrapper. I used peanut sauce for dipping some, but I was out of peanut butter for a while and used cashew butter in the sauce instead - even better!

what about rice paper wraps? lettuce, baby greens, avocado, wrapped up in rice paper and with a peanut dipping sauce.

And baked falafel patties with tahini-lemon dipping sauce would go really well with that mint lemonade.

I wish I posted this sooner; these are great suggestions! I ended up with homemade ranch dip and salsa, plus hummus with potato and corn chips, carrots, and cucumbers to dip. I also made Isa's wheat-free chocolate chip cookies, which are my favorite chocolate chip cookies ever! (Even though I baked them a little too long this time...)
Falafel patties would have been good! I haven't quite perfected my summer roll rolling. Next time!

Thanks, all!! Sounds delicous! Re: the summer roll rolling --either vcon or vwav (I'm thinking vwav) has fantastic directions on rolling them!

Celyn, if you're not doing anything around 3:30 today, you should come by! The weather is icky and the work is dirty, but there will be food and good company!
