The white part is pretty bland, but pleasant - like an actual egg white - & the texture is also very close to an egg white, & the yolky sauce is really yummy & similar to actual yolk - more so if you added black salt I suppose.

I was never crazy about eggs (apart from the occasional soft-boiled one when sick, but that was mostly because my mom used to make them for me when I was little), but my partner used to love them; I'm going to have to get one of those poaching pod thingies so I can surprise him with this. Thanks for sharing!

You are amazing Karena! I also was never that big on eggs, but I did like a sunny side up egg now and then, and I think this would be similar. I should try it, but it looks like it might be a lot of work. Was it?

Thank you! It's not a lot of work, & they're really easy to make, but a bit fiddly. It's easy to halve the recipe if you want to, but if you're going to go to the trouble of making them, I think it's good to make four. They reheat in the microwave really well & in fact, the texture of the white improves & it's exactly like egg white next day. I just had one for lunch on toasted turkish bread with avocado & spinach - you just have to zap it in the microwave for 30 seconds or so. They are much more filling than eggs - I can't imagine being able to eat two in one sitting.
