a lot of work, & they're really easy to make, but a bit fiddly. It's easy to halve the recipe if you want to, but if you're going to go to the trouble of making them, I think it's good to make four. They reheat in the microwave really well & in fact, the texture of the white improves & it's
exactly like egg white next day. I just had one for lunch on toasted turkish bread with avocado & spinach - you just have to zap it in the microwave for 30 seconds or so. They are much more filling than eggs - I can't imagine being able to eat two in one sitting.
