I am always SO disappointed when I get a new cookbook & flick straight to the cheesecake recipes (priorities!) & find they're based on Tofutti cream cheese. I prefer making things from scratch, so I devised this cheesecake (can easily be made soy & gluten free too!). My guinea pigs tell me it is just like a ricotta baked cheesecake in taste & texture. The whipped cream is also made from scratch & it is so much like regular cream. I am going to be blogging the recipes soon.

Where did you get the cheescake and whipped cream recipes? Because I need both of them soooo bad! That is just so much perfect goodness in your picture!

I made them both up & I promise you, I'm posting them both on my blog during July. I have both posts in draft mode as I just tweak the recipes a little & take some more photos. There are variations on the cream recipe - a pouring cream, thick cream, soft whipped dollopy cream & a firm whipped piping cream (the one in the pic) - all achievable, with minor differences, from the same basic recipe.

I'm really looking forward to those recipes... Tofutti is so expensive and hard to get, unhealthy and doesn't even taste that good.
